Eggs Florentine with Sundried Tomato, Bacon & Feta

9 Large EggsEggs Florentine

2 Cups Small Curd Cottage Cheese

8oz Grated Swiss

¾ Cup Crumbled Feta

2 TBSP Sundried Tomato Pesto

1-10oz PKG Frozen Chopped Spinach

14 Slices Precooked Bacon, Chopped

PREP:

Beat Eggs, add Cheeses and stir to combine.  Stir in Spinach & Bacon.  Put Into 8 Souffle Dishes on Sheet Pan.  Cover & Refrigerate.

 

COOK:

Bake at 350 for 40-50 minutes. DO NOT OVER BROWN.

 

 

SERVES 8
